I consider this to be the chinese equivalent of a mozzerella, tomato and basil salad. Only better! It’s light and fresh and I absolutely love it. So many people say they don’t like tofu, but I’m sure they never tried this before.
300 gr fresh tofu, preferably silken tofu
Drain well and cut into 2-cm cubes.
Arrange on a heat proof plate or bowl.
Mix and sprinkle with :
3 T chopped coriander
1 finely chopped red chili
2 finely chopped spring onions
2 T light soy sauce
Just before serving, heat
2 T groundnut oil and
1 t sesame oil
Pour over the salad. The greens should make a sizzling sound.
